I'm including recipes on this page that I find to be healthy, low fat and taste good.
Rice Noodles and Tofu
- Cook about 2 cups of rice noodles.
- Heat up about 3/4 cup of thai flavored tofu on a frying pan. Use non-stick cooking spray, not oil.
- Once the tofu is warmed, add about 3/4 cup of tomato sauce or spicy thai sauce. Use low-fat sauce.
- Place fresh spinash in a strainer. When rice noodles have been cooked, strain the boiling water used to heat up the noodles over the spinash. This will allow the spinash to wilt.
- Finish draining the rice noodles.
- Combine rice noodles, wilted spinach, and cooked tofu with sauce in a pot and stir.
- Serve warm.
Makes about 3 servings.
Linguini and Sauce
- 1 cup of cooked linguini or other pasta
- 1 cup of fully cooked lean ground turkey (or tofu)
- 1 cup of warmed tomato sauce
Cook everything with no oil or butter. Use non-stick cooking spray to cook turkey or tofu.
Combine all 3 into a bowl and mix. Makes 2 servings.
Eat More Spinach
Don't like the taste of spinach, but still want to eat it?
Try making a spinach sandwich: Place about 1/2 cup of spinach in between 2 slices of
bread and a little mustard. The bread will help hide the taste of the spinach.
Pot Pie
- Combine 3 cups of your favorite fresh and diced veggies (eg. carrots, green beans,
potatoes) into a large pot with a 14oz can of low sodium chicken broth (don't add any
water). Cook on medium-high heat until it comes to a boil.
- Add in a 14 oz can of low sodium cream of chicken soup (don't add any water).
- Add in about 2 tablespoons of flour.
- Add in 1 cup of cooked chicken or tofu or a 4th cup of fresh and diced veggies.
- Add in fresh or dried herbs such as basil.
- Let simmer on low heat for about 5 minutes.
- Spray a casserole dish with non-fat cooking spray.
- Pour mixture into casserole dish.
- Take about 4 Pilsbury uncooked low-fat buttermilk buns and use them to cover the top of
the casserole dish. (be sure to poke some holes in the crust). (Any crust will do, it
doesn't have to be Pilsbury)
- Put casserole in the oven at 375 degrees for about 15-20 minutes, or until crust is
golden brown.
- Let casserole sit for about 5 minutes before serving.
Stuffed Sole
- Buy or make a dip from the grocery store, such as imitation crab and cheese spread.
(make sure to buy or make the low fat version of the spread)
- Lay an uncooked piece of sole out and place a tablespoon of the spread in the center.
- Roll the piece of sole up around the spread. Repeat for as many pieces as needed.
- Cook in oven at about 400 deg. F for about 20 minutes or until the sole is completely
cooked through.
- Serve with a large ceasar salad made with a small amount of light dressing and non-fat
croutons.
